IC Dining Chefs’ Win a Silver Medal at the 7th Annual Culinary Conference and Competition (January 2018)

Skidmore College in Saratoga Springs, NY: 11 culinary teams from northeastern colleges and universities were given a mystery basket of ingredients, containing food items like green jackfruit, kamut, blood oranges, duck and four whole flounder. Chefs were challenged to test their innovation in the kitchen and awarded points to determine each team's ranking. The IC Dining team’s innovative menu and competitive grit earned them a Silver medal at the 2-day competition. Congratulations IC Chefs!

Here’s a quick review of the winning silver medal menu: Appetizer: Maple Leaf Cherry Pomegranate Glazed Duck Breast (Herbed Jackfruit and Parsnips with Avocado Crema, atop a Pan Seared, Glazed Duck Breast); Entrée: Pan Seared Pork Chop with Ginger Spiked Apple (Smokey Seared White Marble Farms Pork Chop with Yukon Celeriac Ship, Broccoli Rabe and Herb Pan Jus accented with Ginger Spiked Honeycrisp Apple); Dessert: Spaghetti Squash Spice Cake(Spice Cake Layered with Roasted Pineapple Jam,Candied Hazelnuts and Blood Orange crème Anglaise); Buffet: Pan Seared Flounder with Charred Fennel, Leeks and Purple Cauliflower and Sweet Pea Couscous and Kamut with Anise Beurre Blanc
