Sustainable Lunch at Towers

Contributed by Julie Whitten on 03/16/07

On March 20, 2007, the Sustainable Lunch will be held in Towers Dining Hall from 11:00 a.m. – 2:00 p.m.

The special menu will include: organic vegetable soup, organic apple cinnamon and poppy seed muffins, and The Fresh Food Market organic selection of grilled open faced vegetable pesto and mozzarella sandwiches.

This lunch will also feature The IC Sustainability Initiative, and will demonstrate an interactive exercise from EarthCafé 2050, including Ecological Footprinting developed by students in an Environmental Studies capstone course. The “ecological footprint” illustrates the human impact on the environment by acknowledging how many earths would be required if everyone in 2050 lived at your current standard of living.

Other student groups including ICES and TRANSform will also be participating.

The first twenty-five people will also receive a recyclable coffee mug and certificates for a free pedometer. The mugs are good for a fifteen cent discount on coffee, tea, and fountain drinks at all retail locations. As well, samples of Guayaki Yerba Mate, a new line that is organic and fair trade, and now available at Grand Central Cafe will also be available.
