Sustainability Café on September 17 will explore manufacturing products from mushroomsContributed by Marian Brown on 09/13/12 The Sustainability Café on Monday, September 17th will feature Sarah Araldi ‘11 from Ecovative discussing “Manufactured Mycelium: Environmental Science in a Biotechnological World”. The Sustainability Café will be held in Center for Natural Sciences Room 112 at 4:00PM in conjunction with the Environmental Seminar. Sarah Araldi ’11 graduated from IC with degrees in Environmental Science with a concentration in Biology and Art History with a concentration in Architecture. While here, she worked with Dr. Jason Hamilton to help establish an edible mushroom farm on campus, producing oyster mushrooms in an indoor farm and shiitake mushrooms outdoors, selling to local cooperative markets. Sarah’s senior research project was focused on using indigenous fungi to mycoremediate oil run-off from parking lots. Since joining Ecovative, Sarah has worked on everything from grant projects involving plant essential oil disinfection and fungal cell reanimation to private development projects involving edible mushroom production and potential natural absorbance materials. This event is free and open to the public. “Teachable edibles” – local, organic and/or seasonal snacks – for the Fall 2012 Sustainability Café series are being sponsored by Ithaca College Dining Services whose motto is “Sustainability – Healthy – Fresh.” Please bring your reusable mug and fill up at the nearest drinking fountain or provide your own beverage of choice.
