The recipe below is from one of the great recipe books from the American Heart Association, one of the many prizes for our month long challenges. Submit yours today!

Baked Dijon Chicken[1]

Ingredients:

  • Cooking spray
  • 4 boneless, skinless chicken breast halves (about 4 ounces each), all visible fat discarded
  • 1 tablespoon Dijon or coarse grain mustard (lowest sodium available)
  • 2 teaspoons fresh lemon or lime juice
  • ½ teaspoons bottled minced garlic or 1 medium garlic clove, minced
  • 1/8 teaspoon pepper

Directions:

  • Preheat the oven to 375 F. Lightly spray a 9-inch square glass baking dish cooking spray.
  • Arrange the chicken in a single layer in the dish.
  • In a small bowl, stir together the remaining ingredients. Spread over the top of the chicken.
  • Bake for 15-20 minutes, or until the chicken is no longer pink in the center.
