Submitted on behalf of the Office of Energy Management & Sustainability TUESDAY, 4 FEB., 11 AM – 2 PM, EMERSON SUITES: Have you ever turned away from fresh produce at the market because it was misshapen, small, or slightly bruised? That imperfect produce is often thrown out and contributes to our global food waste problem. The Ugly Food Challenge wants to get you thinking about misfit produce and food insecurity differently. Chefs from Ithaca College, Cornell University, and Maines will battle it out in the Ugly Food Challenge, a competition to create the tastiest plant-based dish crafted from misfit and ugly produce. If that wasn’t challenging enough, there’s an additional catch: the entire dish must be edible, including any plates or bowls. We need YOU to help us decide the winner!
